Andy Holland

Expedition Chef

Andy is an accomplished chef, motorcycle traveler, humanitarian aid worker and former outback cowboy.

He spent two seasons in Svalbard, working as an expedition chef on the iconic tallship Noorderlicht, and a modern superyacht S/Y Firebird.

HISTORY

At the age of 14 Andy started washing dishes in a local restaurant on evenings and weekends, by the time college came around he had worked his way to being a commis chef. On finishing his studies in marine engineering and marine science Andy found himself working in a local ocean-side restaurant. There he eventually became head chef and gained an entry into the Michelin guide. ​

Whilst running the kitchen of this successful restaurant Andy would also volunteer his time delivering humanitarian aid to disaster affected areas around the world. During one deployment to Indonesia, thinking about a new professional challenge he decided to take his cooking skills to sea.

Andy subsequently served on Tall-Ships, Superyachts and charter vessels, as well as private expedition vessels all over the world.

After settling in the tropics Andy honed his skills on dive, surf and kite boarding exploration expeditions in some of the most remote place in the Indo-Pacific region. ​ For the 2018 and 2019 summer seasons Andy left the heat of the tropics for the chill of the Svalbard archipelago. There he gained an appreciation for the beauty and fragility of the Arctic wilderness.

Andy is a keen diver, photographer and kayaker. Through extensive worldwide travel he has gained a vast culinary repertoire. Andy keeps guests and crew happy no matter what the dietary requirements, provisioning limitations or sea state. Working in remote, challenging areas whilst delivering a nutritious high standard of food in all conditions is his forte.

We made it free for everyone to participate and attend it.

We created it in the middle of a pandemic and global recession, with closed borders and our humble resources, but most importantly with a lot of drive, joy, sweat and passion!
